Highly mature grape material from selected vineyards and several varieties – Gemischter Satz as well as produced in just one fermentation by the almost forgotten method “Ancestrale”, the cider is drawn into the bottles as the fermentation process decays, closes and keeps fermenting on its own. It creates a natural tingl: Petillant naturel – short, PET NAT. By the autonomy of the yeasts, each bottle is a unique one!
